Oh, no. I'm sorry, but I've never heard of that happening before. As long as you used the oil, milk and egg it should have been moist and not crumbly.

I had just made these today and may I say they were pretty delish! I just bought some Quaker Oats y'day on sale, not to think that I would ended making oatmeal cookies today b/c I had a sweet tooth. So glad I came across this easy recipe and thankfully I had all ingredients on hand. I will be making these again and perhaps try adding chocolate chips next time.

I've been thinking of trying out some of my old standby recipes with coconut oil. Glad it turned out for you!

Just made these! I used melted coconut oil instead of vegetable. Also threw in half a cup of shredded coconut. They turned not as fluffy as yours, but tasty! ??

Just made this recipe and it was the best oatmeal cookie recipe I've ever made! Thank you for posting it! I love the hint of ginger and cinnamon. That was a nice touch! I also loved how much they retained shape and stayed fluffy!

Looking forward to making these again!

I adore oatmeal cookies, but I never think to have them. I stumbled across your recipe on Pinterest when I was trying to find a treat that would use ingredients we already had.

My husband hates oatmeal cookies, and anything with oatmeal in it. He LOVED these... I had to make another batch because most were eaten by him. haha

Thank you for sharing this recipe. It's beautifully simple, easy to make, and they turn out rustic and delicious!!!

Thank you, Tina! I made a bunch of them at Christmastime to give as gifts and added raisins too!
